BABY MARROWS WITH EGGS - Kolokythakia me avga

 
½ kg baby marrows

1 cup oil

4 eggs, beaten

salt and pepper

Wash and slice baby marrows very thinly.
Heat oil in a pan and fry marrows until golden.
Pour off excess oil and return pan to stove.
Pour in beaten eggs and stir lightly over medium heat until eggs are set.
Serve hot.

Instead of marrows, try tomatoes or potato chips.
