Bacon Spanakopita

My first attempt at Spanakopita. 
Bacon, leeks, spring onion, spinach and feta. 12 layers phyllo on the bottom and top. 

Date and oat pastries

Filled left over phyllo pastry with dates and oats for a tasty sweet

Tuna Steak and Veg


Okay, so maybe Veg portion is a little too big 😳
Pan Fried tuna seasoned with salt & pepper
Steamed spinach, zuccini, broccoli and cauliflower 
Tomotoes, homegrown lettace, baby spinach and kolrabi leaves
Slice of feta
All sesoned with a liitle olive oil, lots of lemon, salt and pepper

My First Apple Pie

My first attempt at apple pie. 
Prepared apples by removing cores, slicing and cooking in water until tender. 
Removed the water, and stirred in about 1/3 cup brown sugar, some cinnamon, ginger and lemon rind.
I then buttered my baking dish and placed my pastry on the bottom and sides, more butter on the pastry, then added my apple mix. Covered the top with a pastry lid - buttering both sides. Baked for 40 minutes. Coffee to go with it 👌

Pork Fillet Mac and Cheese

Today's wip it up turned out a macaroni and cheese. 

Pork Fillet lightly fried
Sautéed white and red onions, mushrooms, zucchini and sliced baby spinach. 
Also chilli and garlic. 
Placed all the ingredients including cooked macaroni into a dish, added white sauce, covered with cheese and baked for 20 minutes.
